Ritual Coffee Roasters (2005-2006)
Ritual Coffee started as an espresso cart at the Ferry Plaza Farmers Market in 2005. In 2006, founder Eileen Hassi Rinaldi opened a cafe and roastery in a former laundromat on Valencia Street, serving some of the city's first truly specialty light roasts.
The Valencia cafe drew national attention and helped define third-wave coffee in San Francisco.
Ritual grew into a multi-location roaster and proved a cart could become a permanent institution.
A direct San Francisco precedent for a temporary coffee format converting to a brick-and-mortar flagship.
