Pandemic restaurant shutdowns (2020-2021)
Utah and most states ordered restaurants to stop dine-in service during the COVID-19 pandemic. Many operators kept their food licenses current even while revenue stopped, paying renewal fees to preserve the option of reopening.
Some restaurants reopened when restrictions lifted; others closed quietly, and license lists updated on their own schedules.
Public license records became a lagging indicator that did not always match a restaurant's real operating status.
The same ambiguity applies to Taqueria Los Lee: absence from the list is a signal of possible closure, not proof of it.
